Makes 20 servings
Ingredients:
3 cups tamarind pods, unshelled
4 liters purified water
3/4 cup sugar
Place tamarind pods in liter of water, or until covered. Let soak for 2 to 4 hours.
Squeeze excess water from tamarind pods. In a colander place the tamarind pulp and filter purified water through one to two times. Discard excess pulp.
In a large container, place sugar and tamarind concentrate. Stir until sugar is dissolved. In increments add remaining purified water.
Continue adding sugar and water, tasting until desired sweetness is achieved.
